Abstract

Tofu is a staple food in Indonesia, favored for its good nutritional value and relatively low cost. Tofu production in Purwantoro District, Wonogiri, is still carried out traditionally with simple equipment and skilled labor, resulting in inconsistent product quality. This research aims to develop a tofu coagulation control system using Internet of Things (IoT) technology integrated with the Fuzzy Mamdani algorithm. The system utilizes pH sensors and DS18B20 temperature sensors to monitor the mixture conditions in real-time, using this data as input for the Fuzzy algorithm that controls the speed of a DC motor via PWM signals. This setup ensures optimal coagulation, producing tofu with consistent texture and quality. The implementation of IoT enables remote monitoring and control, enhancing production efficiency and reducing the need for manual labor. This system represents an innovative solution for the tofu industry, improving production quality and efficiency while contributing to technological advancements in the food sector.
